The Club is seeking a culinary professional to take ownership of the catering operations, answering directly to the General Manager and as an integral part of the senior management team, with input into the clubs future direction. As Head Chef of this large catering operation, you will be responsible for managing all diverse catering outlets and have the ability to manage, motivate and train a large team of staff. This key role will require the successful delivery of up to 400 covers in peak times and managing all facets of the day-to-day catering operation.
The successful candidate will possess a passion for implementing and managing exceptional customer service and enjoy developing a personal rapport and unique personal brand with customers. Extensive experience across a range of catering styles from cook-to-order to café-style fare and functions will be essential along with, experience in a high volume venue.
Thriving in this award-winning Club, the ideal candidate will understand relevant legal and regulatory compliance, have an in-depth understanding of kitchen costings, knowledge of accounting and moderate to high computer skills, particularly Excel and Word.
Key Responsibilities for this role include:

  • Control of wages and food costs to specified budgets
  • Create, cost and implement restaurant, café and function menus
  • Create, cost and implement a varied daily specials menu each day
  • Implement and maintain service standards
  • Innovative menu planning
  • Maintain high HACCP and OH&S procedures and standards
  • The ability to create, train and lead in a team environment
  • The ability to manage a large kitchen and large team of staff
