Lunch at Broncos with the Magic Oven

Share Post:

Photographed after lunch at the Grill Restaurant is DWS chairman John Dickson with Broncos Leagues Club CEO Joe Kelly and Chef Brook next to his magic oven.

When Executive Chef Brook at Broncos Leagues Club teams up with his unique Italian Mibrasa Charcoal Oven, magic happens! The magic wood fired oven which never goes out can reach temperatures of up to 400° and with different woods can infuse a unique flavour into whatever they cook, it’s the most perfect steak and pizza oven, but nowhere is that magic more evident than in the Oysters Kilpatrick for which the Broncos restaurant is famous for.

Brook is another one of the renowned chefs working in the Queensland club industry. During his extensive career he has been Sous Chef at the Brisbane Club, Head Chef at the Rugby Union Club, Executive Chef at Tattersalls Club, Executive Chef at Arana Leagues Club, and for the last 5 years, he has been Executive Chef at Broncos Leagues Club.

Recently Broncos was awarded Best Café Dining, Best Dining Medium, Grill Restaurant and Brook has been a finalist in chef of the year in 2021 and 2022.
